Chicken Soup

Ingredients:
3 chopped chicken breasts
2 tsp canola oil
1 cup chopped onion
1 cup chopped carrots
1 1/2 cups chopped mushrooms
1 tsp mixed herbs
1 cup peas
4 cups fat-free, low-sodium chicken broth
1 cup fat-free half and half
1/4 cup cornstarch dissolved in 1/4 cup fat-free milk
Salt and pepper to taste
2 tsp canola oil

Preparation:
- Fry carrots for 6 minutes then add mushrooms, mixed herbs and onions and fry for another 6 minutes.
- Mix in chicken and peas, and then add chicken broth.Simmer for 15 minutes.Add fat-free half and half. Stir in cornstarch mixture and continue to simmer gently for 5 more minutes.

Chicken nuggets
Chicken nuggets are usually associated with fast food outlets. It is for this reason when I’m craving some take away food I always turn to this Healthy low fat chicken nugget recipes with a side order of relish!
What I tend to do is make a big batch of them and the ones that aren’t going to eaten I simply throw them in a few freezer bags and put them in the freezer for another time.
Ingredients:
1 pound boneless, skinless chicken breasts
1/4 cup flour
1/4 tsp paprika
1/4 tsp freshly ground black pepper
1 egg white
1/4 cup low fat buttermilk
1 cup breadcrumbs
Preparation:
- Preheat oven to 450 degrees. Coat a baking tray with sunflower oil
- Prepare three bowls: one with flour and seasonings, one with egg and buttermilk stirred together, and one with breadcrumbs. Roll cubed chicken breast pieces into the flour mixture.
- Dip each chicken piece into the buttermilk mixture and then roll in the breadcrumbs.Place chicken on baking tray and bake in a 400 degree oven for 20 minutes.
