Simple Low fat dinner recipes that include some of the best fat burning food!



Personally, I love the rich flavors of Italian foods. However, fat tends to be a major factor in Italian food when you consider that Olive oil, mozzarella, parmesan and so on tend to be a permanent fixture in most Italian meals.

This caused great problems for me when Dieting until I figured out that I could create a Low fat Dinner recipe that encompassed all the great flavors of Italian foods and that neglect most of the fat content!

Below are some of my favorite Low fat recipes.

I often prepare I rather large dish so that both me and my family can graze on it for anything up to 3 days.



Risotto


Ingredients:


3 1/2 cups fat-free vegetable broth
2 tsp olive oil
1 chopped onion
2 chopped garlic
1 tsp mixed dried herbs
6 oz chopped cremini mushroom
6 oz chopped shiitake mushrooms
1 cup Arborio rice
1/2 cup warm dry white wine
2 cups fresh baby spinach
1/4 cup parsley


Preparation:


  • Empty broth into a saucepan and heat until simmering. Keep warm.
  • Fry onions and garlic until soft. At his stage throw in the herbs and mushrooms.
  • Add rice and stir quickly.
  • Add warmed white wine and stir. Once the wine has been mostly absorbed, add the broth, one cup at a time, waiting until each cup of broth has been absorbed before adding the next. Before adding the last one and half cups, add the spinach. Sprinkle parsley before serving.

Serves 4

Spaghetti Bolognese


Ingredients:


2 tsp olive oil
1 chopped garlic clove
1 chopped onion
1 chopped carrot
3/4 pound extra-lean ground beef
1 cup chopped cremini mushrooms
1 tsp dried oregano
1 14 oz can crushed tomatoes
1/4 cup low fat milk
3/4 pound brown spaghetti


Preparation:


  • Add oil, garlic, onions and carrots to a large pot and stir until onions are soft.
  • Add the ground beef and cook until meat is browned.
  • Add mushrooms and oregano, and cook for a further 3 minutes.
  • Mix in tomatoes.
  • Simmer for 30 mins.
  • Stir in milk and simmer for 10 mins.
  • Boil the brown spagetti in the meantime.

Serves 4

Lasagna


Ingredients:


11 X 7-inch baking dish

2 tsp olive oil
1 chopped garlic clove
1 chopped onion
1 1/2 cups chopped cremini mushrooms
1 chopped celery stalk
1 chopped carrot
1 chopped zucchini
1 chopped yellow squash
1 28 oz can crushed tomatoes
2 tbsp tomato paste
1 tsp mixed herbs
2 handfuls of chopped baby spinach leaves
1 15 oz tub low fat ricotta
8 oz no-cook lasagna noodles
3/4 cup reduced fat mozzarella cheese


Preparation:


  • Preheat oven to 375 degrees
  • Heat oil in a large saucepan.
  • Fry garlic, onions, mushrooms, celery, carrots, zucchini and squash for 10 minutes.
  • Add tomatoes, tomato paste and herbs.
  • Bring to a boil, then reduce to a simmer for 10 minutes. Stir in spinach.
  • Now you need 3 layers -sauce bottom, noodles middle, ricotta cheese top- placed 3 times in the baking dish.
  • Top with mozzarella and bake for 30 minutes in an 380 degree oven.
